PUMPKIN BUTTER! That is all I have to say. Never have I ever tried pumpkin butter before I decide to make this yummy concoction. I know you are probably thinking BUTTER, how is this healthy? Don’t worry it’s not actually butter, it’s a spread and boy is it amazing. This pumpkin butter has apple cider, cinnamon, brown sugar, and of course pumpkin. Best of all its still pretty healthy for you. Spread it on toast, scones, muffins, dip apples or (if you are splurging) ginger snaps in it. Have it as a snack or a wonderful dessert. Yummy.
Healthy Pumpkin Butter
3 1/2 cups pumpkin puree, or 1 (29 ounce) can (not pumpkin pie filling)
2 tsp vanilla extract
3/4 cup apple cider or juice
1 cup packed brown sugar
2-3 cinnamon sticks
1-2 tsp pumpkin pie spice (to taste)
Combine purred pumpkin, vanilla, apple juice, spices, cinnamon sticks and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 – 40 minutes or until thickened. Stir frequently. Adjust spices to your taste. Makes 3 3/4 cups. After cooled store in a mason jar.
This makes a great housewarming gift. Add a label and tie a ribbon of fall color around the neck of the Mason jar. Enjoy and feel free to send me pictures of your end results. Happy October!
